I used to make batches of this Broccoli and Cauliflower Soup Recipe and take to work for a quick easy health lunch.
Ingredients
Head of broccoli
Head of cauliflower
One brown onion
Vegetable stock (Boullion), or whatever stock you like
Water
Olive Oil
Salt, Pepper
Method

Chop onion and cook in large saucepan with a good glug of olive oil until soft

Chop broccoli and cauliflower in to florets and add to soft onions

Add tablespoon of veg stock or carton of liquid stock

Top with water so that the liquid just covers the veg

Bring to boil and simmer until soft (around 15 mins)

Blitz with stick blender and serve
Serving Suggestions

I like to crumble a little blue cheese on top for a BANG of flavor

Serve with a little crème fraiche through the top and sprinkle some crispy breadcrumbs or croutons for crunch

Could also add some crispy pancetta

Or just have as is! So healthy and tasty

Serve with crusty buttered bread if you are being naughty!
