This is an easy take on a Ceasar salad served with fresh fish and lots of dill!
Ingredients
Basa fillets
1 x head of gem lettuce
4 x anchovy fillets
1/2 cucumber
1 x small bunch dill
20 g parmesan
Caesar dressing (i cheated here)
25g butter
Half lemon
Salt, Pepper, Olive Oil
Veg – of choice. I served with crunchy sugar snap peas and did some extra potatoes for my husband.
Method
1. Start by washing and drying the gem lettuce and carefully laying in a bowl
2. Chop the cucumber into small cubes and drop in to the cups evenly
3. Pick some dill fronds and place in cups
4. Chop the anchovies and again place through the lettuce cups
5. Heat a frying pan with a drizzle of olive oil
6. Fry the fish for about 2/3 minutes each side depending on the thickness of the fish. Lightly season with Salt and Pepper
7. Once just about cooked add in the butter a squeeze of lemon and some fresh dill. This creates a light fresh sauce fr the fish
8. Serve fish on the plates, dress salad with Caesar dressing and grated parmesan
